Aigre Doux de Poisson / Sweet & Sour Fish

Servit 4-5 personnes

This recipe has two versions: French and English


Cette recette a deux versions: Français et Anglais

Ingredients

4 filet de poisson
3 gros oignons coupés en 4 tranches
1 carotte trancher en longueurs (2 cm)
3 poivrons (rouge, jaune et vert) de 200g
1 Ananas
Sauce d’Aigre Doux
1 concombre
1 cuillère à bouche d’ail gingembre
1 cuillère à bouche poudre de cange / fécule de tapioca/ Maizena
200g de farine
2 oeufs


Sel Poivre huile d’olive

Procedure
·         Laver et couper les filets de poisson en 4 morceaux
·         Assaisonner de sel poivre et l’ail gingembre (1 petit cuillère)
·         Chauffez huile pour la friture


·         Prendre un à un les morceaux de filets mettez dans les œufs et puis mariner dans la farine
·         Faites frire dans huile chaude, retiré quand ça devient légèrement doré, réservé


·         Dans un poêle, mettez 1 cuillerée  de l’huile d’Olive et mettez les poivrons, oignons, concombre, Ajoutez l’ail gingembre, 1 cuillerée  de poivre, sel 1 cuillerée, faites sautée pendant 5 minutes puis verser la sauce d’aigre doux, ajoutez 1 cuillerée de poudre cange couvrez et laisser cuire pendant 10 min sur feu doux


·         Ajouter les poissons et laisser cuire pendant 20 min sur feu doux
·         Servir chaud

Sweet & Sour Fish by Mauritian Foodies (4-5)

Ingredients
4 fish fillet
3 large onions, cut into 4 slices
1 carrot cut into lengths (2 cm)
3 peppers (red, yellow and green) 200g
1 Pineapple
Sweet & Sour Sauce
1 cucumber
1 tablespoon ginger garlic mouth
1 tablespoon powdered Tapioca Starch / Maizena
200g of flour
2 eggs
Salt Pepper Olive oil


Procedure
·         Wash and cut the fillets into 4 pieces
·         Season with salt and pepper and the garlic ginger (1 teaspoon)
·         Heat oil for frying
·         Take one by one the pieces of fish put in eggs and then marinate in flour
·         Fry in hot oil then removed when it becomes golden brown, reserved
·         In a pan, put 1 tablespoon of the olive oil and place the peppers, onions, cucumber, ginger 
·         Add the garlic, 1 teaspoon pepper, 1 tablespoon salt, have skipped for 5 minutes then pour the sauce of sweet and sour, add 1 tablespoon of powder cangia cover and cook for 10 minutes over low heat
·         Add the fish and cook for 20 minutes over low heat
·         Serve hot

Mushroom Soup by Mauritian Foodies

Ingredients
200g Sliced Mushroom,
1 chicken/Vegetable stock cube,
2 tablespoon cream,
1 branch thyme,   
2 garlic cloves,
1 tablespoon flour,
1 pinch pepper,
1 onion sliced cube,
salt, 1 teaspoon butter



Procedure for mushroom soup

·         Rinse and slice the mushroom
·         Put 1 chicken stock cube in hot water to dissolve ( 1cup)
·         Put the mushroom to boil for 15 min + 2 cups of water and cover (High heat)
·         Leave water dry then add sliced cube oignon, butter, garlic cloves, thyme, pepper, flour and stir
·         Add the stock + ½ cup of water
·         Leave to simmer for 15 mins (high heat) + add a pinch of salt (for taste only)
·         After 15 mins, turn off heat, put in blender, blend until soup becomes soft cream
·         Add the 2 tablespoon of cream and stir
·         Serve hot

Procedure for roasted Ostrich
Ostrich meat (400g), grind black pepper, barbecue herbs, 1 pinch salt, 1 teaspoon ginger garlic paste, 2 tablespoon oil. 2 tablespoon oil + High Heat, light frying for 4 mins on each sides.

Serve hot!!!

Soupe au citrouilles et pommes de terre

This recipe has two versions: French and English

Cette recette a deux versions: Français et Anglais



Version Française: 

Temps de préparation : 25 minutes
Temps de cuisson : 25 minutes
Ingrédients (4 Portions) :
- 500 g de citrouille
- 2 pommes de terre 
- 2 gousses d'ail
- persil, sel et poivre
- 10 cl de crème fraîche -déco/optionnel

Préparation de la recette :

Pelez le citrouille et coupez-le en morceaux pas trop gros, épluchez les pommes de terre, lavez-les et coupez-les en morceaux.

Dans une cocotte, faites sauter les citrouilles et les pommes de terre dans du beurre. Ajoutez l'ail et le persil, salez au gros sel et poivrez, recouvrez d'eau et laissez cuire environ 25 min.



Mixez le potage. Servez avec de la crème fraîche.

English Version



Pumpkin soup and potatoes
Preparation time: 25 minutes
Cooking time: 25 minutes

Ingredients (4 servings):
- 500 g pumpkin
- 2 potatoes
- 2 cloves garlic
- Parsley, salt and pepper
- 10 cl cream -Decoration / optional

Preparation of the recipe :
Peel the pumpkin and cut into medium sized pieces, peel the potatoes, wash them and cut them into pieces.
In a casserole, sauté the pumpkin and potatoes in butter. Add the garlic and parsley, season with salt and pepper, cover with water and cook about 25 minutes.
Mix the soup. Serve with sour cream.
